OT - Whole Roast Pig

If you like Cuban Food and don't mind visiting the hood and would love to dine on a whole roast pig this Friday afternoon, check out my OTHER BLOG for the details. Basically I am going to pig out at South Central's most authentic Cuban restaurant as they cook a whole pig in the parking lot, care to join us?

Nobody is paying or compensating me to post this, I am just spreading the word because this place is so very, very good that you might want to know about it.

My friend and I went to visit his family in Spain. We went with his dad to pick out a pig, the butcher brought the pig to the house. I thought the pig was already going to be butchered and the meat delivered to the house. But to my surprise the pig was brought alive and the butcher slaughtered it right in the backyard. I was there for the whole process and took pictures. I’ve never seen this happen, and I kind of felt sad for the pig because it knew that it was about to die. However, whatever emotions I had immediately disappeared the second I tasted that freshly bbq’d pork meat!

I used to slaughter animals on the farm all the time.

We would cut the throat open missing the jugular. Then reach into the animal and cut the aorta and on the way out cut the vocal chords. While we bled the animal we collected the blood for making all types of ethnic foods, and sausages.

Sometimes we would cook them up in an imu, or roast them on a spit, for the customer.

Now when we drive in the country we all see walking food on the farms.

There was a great Steve Martin comedy special

back in the 80’s where he’s at a fine restaurant and he yells at the waiter, “Get me a pig on a stick and fry him up good!” I like to yell that when I go out to eat.

I hope my wife and I can attend.

Even if it means braving the Friday traffic out of LA.

   We are thinking of bringing a roasted pig to my family’s Christmas celebration this year. My wife is from the Phillapines(sp?), they also roast pigs(lechon) for events. I guess if you live on an island you roast a whole pig. I’m not being snobbish to different cultures, just an observation. I do love a Fillapino dish made with pork blood called “DE-NEW-GUY-EN” or chocolate soup.

    I’d love to be able to pre-taste this because a pig aint cheap. If I don’t think it will be enjoyed by birth family; I won’t waste the money.

Philippines.

I went to Manila a while back. Although I didn’t get to eat a roast pig, I did love their pork-filled sweet rolls though. I forget what they’re called. And fried plantains are the bomb too.

No matter what happens from here on, it has been a great season.

Pork filled sweet rolls are Chinese

Siaopao (show-pow). The Phils have a few foreign influences they’ve incorporated into their own culture.

For hittheg, I know a Filipino in Garden Grove who offers full Lechon for only $125 or is it $150. We’ve bought there several times for large parties.

sounds great but I'll be in the opposite side

I remember as a kid when my dad’s friends would get a whole pig from a butcher and they would dig a pit, crank up a fire and then put the pig in, cover it up and it would cook all day. This was at Elsinore..we’d spend the day skiing and playing in the water (there was a time it was relatively clean) and then late afternoon, they’d start getting the pig out. OMG, it was amazing!! mmmm, crackling pork skin and the meat was so tasty. Good times.

In Hawaii

I learned that this, of course, is a traditional part of a luau. But since becoming a United State, restaurants have to cook their pigs in a big box instead of underground, thanks to the FDA, so they can regulate the temperature better. However, I guess Hawaiians have compared, and the temperatures cooking a pig underground are actually much higher than cooking it a box. It’s unfortunate because the extreme temperature is part of what makes the meat so tender. Plus, the meat gets colder faster now.

No matter what happens from here on, it has been a great season.

We still do cook them in the ground.

Every Thanksgiving you can make a contribution to some school, or organization, to cook a turkey, pig, anything in an “imu” – underground oven.

I visited my dad

and him and his new girly girl wanted to have a pig roast. So they bought a while pig that was degutted and such, but stil had prepping to do.

So I got to remove the pig vagina, and other lovely parts, and had to marinade and roast it.

It ruined any pig product forever for me, I still cant eat ham.

I brought sexy back, but they only gave me store credit....

My favorite meats are ribs, carnitas, and bacon. I don’t know what I would do if pig was ruined for me. Thanks for the heads up though. Now I’ll know when someone asks me if I want to remove a pig vagina, that it’s not as fun as it sounds.

(Now that I think about it, I guess I do care. Some dogs are brilliant. The Der, not so much. I chatted up a cart vendor a couple of months ago, who told me that almost all of the Kosher dog makers in America were going out of business with the recession. Even Hebrew National was going under, but Costco would probably buy them out since Costco sources HN as their in-house dog. Me, personally, always found Shafar dogs to be the ultimate. Whatever the hell they were putting into those was important shit, and I will miss it.)

Jewish deli merchants ALL knew about Shafar dogs, but none ever chose to carry them.

None ever offered to order a case for me, either.

At least, this is true for the delis I visited here in OC.

I can't really do the whole see-the-animal-that-I'm-about-to-eat thing

Terrifies me. Even something like a fish…can’t do it. I need that emotional disconnect between my food and the fact that it was at one point alive. I’m by no means a vegan, but just can’t do it.

Was anyone else there?

My wife, the little boy she babysits, and I were there. Very good!! Excellent, friendly, and helpful staff work at P(forgot the name). Didn’t realize Cubans also call a BBQ’ed pig “lechon,” however, Tagalog is very similar to Spanish.

      I was expecting a pig on a spit with an apple in its mouth, but (as stated above) it was roasted in a box. The dear pig that gave its life to satisfy my taste buds and sate my hunger was actually split down the middle. The waiter even brought us out to look at it.

    I played Desi Arnaz in the car to get psyched-up for our lunch. Apparently Cubans serve meals with white rice and black beans, I prefer them mixed. Ebony and Ivory. We got one order mixed, one separated. My wife thought the rice was fried but couldn’t figure out what it was fried with. (butter?)

     Is it worth driving into LA from Azusa for this lunch? Maybe not, but our kids, all from The Philippines, sure did like this delicacy. So, it was more than worth it for us.

     I was hoping to meet fellow HH’ers but did not. I thought I saw REV but wasn’t sure. I’m kind of shy so I didn’t go up to him and ask. REV, do you have an elaborate tattoo on your upper arm?

     Thanks for informing me(us) about this. A new adventure for my memoirs. BTW I think they roast a pig every Friday.

I was outside

I saw you guys walk up – but you went inside and then i wasn’t sure – thought wearing a red Orem Owlz hat made me approachable!!!!!!!

Glad you liked it. The tattooed guy inside is a friend who read it on another one of my blogs. Two other guys got there at 11:30 – they misread the post – the manager said they were asking for me.

Driving down Soto made me feel sorry for the pigs. Farmer John, Hoffy – Soto must be the end of the line for pigs.

I start my work fairly near there. The train yard is on eighth street. I leave every tenth day early in the morning. I go to Figgy’s new home town of Seattle. (wiping moist eyes)

     Angel minor league hats: I have a Lake Elsinore Storm hat. Before they switched with Cucamunga. My dad had season tix w/the Storm. Saw Erstadt there. A man amongst boys.

    I guess real fans have to be subtle.

    You live near there? It seemed all industrial. I traveled from the north down Soto.

     Is the roasting of a pig every Friday true?

Are you a hogger?

Drive freight? Nice. If you are a hogger, what is the designation for a freight that goes from LA to Seattle? I know there are WCWST and CIBAT’s — but those are simply the LA to Oakland routes. Any insight would be cool.
